I still run 2 GoPro Hero 8’s, one in front (facing me) and one in back (over the shoulder). I haven’t had any issues with them in my 6 years of use. I do plug them into battery packs instead of using their batteries so they don’t overheat.
I’d love to try the Insta’s, but their lack of “waterproofness” (is that a word?) has me leery of taking them on the water.

I can’t think of any regrets off the top of my head (I tend to overthink before I buy 😂). But I absolutely second good quality paddle and rod leashes!
For the kayaks I’ve had that don’t have a good paddle clip built in, I like the Yak Attack Double Header – and I still leash the paddle (throwback to my touring kayak days on the ocean and fast rivers) -
We ran similar setups a few years back. We put the rod holders on the outside of the crate with heavy duty zip ties and cut down a cutting board for the lid. This allowed me to mount my camera to the top of the lid. I like the clean look of your setup with the PVC.

I still have the old original Black Pack and it holds everything I need including 5-6 rod holders. And it’s fit every kayak I’ve had. The only thing I really like about the Pro is the modular small crates that sit on top.

It’s definitely solid, it’s lasted me about 6 years so far. Not sure if it’s “more” durable than the Pro, they are both pretty solid. I just don’t see a need to upgrade yet. It took me a while to convince myself to get the Black Pack when my milk crate worked just fine 😂
